Healthy Food Recipe


A healthy food recipe doesn't mean you cannot enjoy the occasional stir fry.

In fact, stir fry is a healthy way to cook. Because it is quick, it helps to lock in valuable nutrients you could otherwise lose from boiling vegetables.

Whether you're into low fat or low calorie eating, try this quick and easy healthy recipe for a truly wonderful meal. To retain all the ingredients as you stir briskly, a wok or large frying pan with deep sides is essential when you stir fry


About healthy food recipe

You'll need fresh, boneless and skinned chicken breasts. You can serve it with boiled brown rice, couscous or with crispy noodles.



Stir-fry chicken breast with asparagus

  • Preparation Time: 20 minutes
  • Cooking Time: : 10 minutes
  • Serves 4:

  • 550g (one and a qtr pound) boned, skinned chicken breasts
  • 2 tsp finely chopped root ginger
  • 2 spring onions, chopped
  • 1 clove garlic, crushed
  • 1 large red pepper, deseeded
  • 1 tbsp cornflour
  • 1 tbsp dry sherry
  • 2 tbsp water
  • Salt and pepper
  • 225g (8oz) canned waterchestnuts
  • 100g (4oz) button mushrooms
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • half tsp sugar


    Preparation

  • Cut chicken into thin strips. Put in bowl with ginger, spring onions and garlic.

  • Blend cornflour with sherry and water. Add to chicken and mix well, season with salt and pepper

  • Cut asparagus into 2.5 cm (1 inch) pieces and cook in a little boiling salted water for 3 mins. Drain.

  • Cut red pepper into thin strips. Slice water chest- nuts and mushrooms

  • Heat oil in a wok or large deep sided frying pan. Add chicken mixture and stir fry over fairly high heat for 2-3 minutes

  • Add red pepper, waterchestnuts, mushrooms and asparagus and stir from for 3-4 minutes. Cover and cook for 2 minutes without stirring. Stir in soy sauce and sugar and stir well. Serve at once



    Nutrition:

    This healthy food recipe is low calorie and low fat, at approximately 305 calories per serving. Serve with some plain brown boiled rice.
