Ladies! Easter 2008 will soon be upon us, so I'm going to kick off with this delicious Easter recipe of pork with beer sauce.

In case you're wondering, Good Friday falls on March 21st, with Easter Sunday on 23rd March 2008.

About Pork With Beer Sauce

This pork with beer sauce makes a terrific Easter dinner recipe or for lunch or supper. It is very tasty, easy to prepare and make an alternative to conventional roasts.

  • Preparation Time: 15 minutes
  • Cooking Time: 1 and a half hours
  • Serves 4:

  • 800g (1 and 3qtr pound loin of pork in one piece)
  • (Salt and pepper)
  • 1 garlic clove - crushed
  • 2 small onions - quartered
  • 2 tbsp olive oil
  • 450ml (15 fl oz) beer or lager
  • 150ml (5fl oz) single cream
  • 1 tbsp cornflour


    Preparation

  • Rub pork with seasoning and garlic. Heat oil in large flameproof casserole dish and add meat. Fry until browned on all sides then add onions, browning lightly

  • Pour in beer and stir well. Cover and simmer gently for one and a half hours, basting meat with beer every 20-30 minutes

  • Test if meat is cooked by piercing deeply with a metal skewer; if juices run clear, remove from the casserole and place on a warmed serving dish

  • Blend cream and cornflour together and stir into the beer sauce. Bring to boil and stir until thick and smooth. Season to taste with salt and pepper

  • Do choose a lean joint of pork. Alternatively, trim any fat away from the meat prior to cooking it
