About Easter Dinner Recipe
This mushroom-stuffed lamb meal make an exquisite Easter dinner recipe. Tasty and succulent, it contains far less calories per serving than you might imagine. Whether for lunch or dinner, it is really a superb meal that can be served with roast potatoes, carrots and seasonal vegetables.
Easter Dinner Recipe - Mushroom-Stuffed Lamb Shoulder
Preparation Time: 20 minutes
Cooking Time: 2hrs 10 minutes
Serves 6:
1.5kg (3lb) shoulder of lamb - boned
25g (1 oz) butter
1 onion, finely chopped
225g (8 oz) mushrooms, sliced
50g (2 oz) ham, chopped
salt and pepper
1-2 tbsp fresh chopped mint
250 ml (8 fl oz) chicken stock
2 garlic cloves, halved
2 tbsp corn oil
plain flour, to thicken
250ml (8 fl oz) vegetable stock
fresh herbs to garnish
Preparation
Heat oven to 180C (350F/Gas 4). Melt butter in frying pan. Add onion, ham and mushrooms and fry for 3 minutes until onion is soft. Stir in seasoning and mint - then cool
Stuff the cavity of the lamb. Tie with string at regular
intervals. Place into a roasting tin and add stock and garlic then brush with oil. Roast for 2 hours or until
cooked
Transfer lamb to a serving dish. Remove string and allow
to stand. Make gravy using the juices in the roasting tin.
Thicken with flour and add strained vegetable water or stock
Garnish with herbs and serve meat hot with gravy.
Pre-heat grill. Sprinkle salmon steaks with salt and pepper
(if using). Brush with olive oil and top with lemon rind
Cook under a medium grill for 7-10 minutes on each side, occasionally brushing with a little oil
Serve the salmon with lightly cooked sliced courgettes and
garnished with lemon and dill
